Cheese Cellar

Located within the estate, our Cheese Cellars were constructed to provide affinage our cheese, here they will receive the utmost care from our lovely cheese makers.

Our cheese are placed atop pine wood planks that are coated in beeswax. In order for bacterial flora to flourish in this environment we need to ensure that a good airflow is maintained.

The cellar is kept at a constant temperature, between 10 to 12 degrees Celcius or between 50 to 53.6 degrees Fahrenheit. In addition to temperature, humidity is also an integral part of aging, therefore a Relative Humidity (RH) between 80 to 85 percent must be sustained.
